YAM CROQUETTES
CHRIS WILSON USES LEFTOVER YAMS TO MAKE CROQUETTES
Ingredients
Leftover yams, between one and two cups
1 egg
Panco breadcrumbs
Regular breadcrumbs
Parsley
Brown sug
Marshmellows
Chopped walnuts

Marshmellows

Directions
Add egg to the mashed yams and mush with hands incorporating egg throughout. Add regular breadcrumbs till it feels like a bread dough
Form little ping pong sized balls and then roll the balls in panco breadcrumbs, then drop into 375 degree oil till golden brown
Drain on paper towel
Melt marshmellows in a pan, adding a little water to help them melt
Place croquettes on a plate and spoon melted marshmellow over the croquettes, sprinkle a bit of crushed walnut and a tiny bit of brown sugar and serve
