Tomato Egg Open Faced Sandwich
Serve on crusty pan biagio
Ingredients
¼ cup minced onion
1 cup canned tomatoes or tomato juice
¼ cup minced bacon
6 eggs, slightly beaten
Salt and pepper
Directions
Fry bacon until crisp.
Add onion.
Fry until brown.
Add tomatoes or tomato juice.
Season to taste.
Add eggs.
Cook slowly, stirring constantly, until whites are firm.
Serve on toast.
