Broccoli Slaw
Great side dish, lunch or snack
Ingredients
2 bags broccoli slaw
1 small bag of slivered almonds (1 cup)
3 T. sesame seeds
4 chopped scallions (optional)
1 Ramen noodle package, oriental flavor, broken into pieces
Dressing:
3/4 c. canola oil
1/4 c. red wine vinegar
1 large splash balsamic vinegar
seasoning packet from ramen noodle package
1 t. sugar
salt and pepper to taste
Directions
Toast sesame seeds and almonds in toaster oven until lightly brown. Whisk together dressing and pour over broccoli slaw. Add toasted nuts and ramen pieces.
Healthier version:
More nuts. No ramen noodles. Less oil. I never add salt as the flavor package from the soup mix is salty enough.
