SABYONE - THE FOOD DUDES
VIN REALLY WHIPS THOSE EGGS INTO SHAPE
Ingredients
8 eggs beaten
1/2 cup sugar
4 tablespoons lemon juice
4 ounces soft butter
2 sprigs mint
Berries of your choice
Directions
Place a large bowl over a double boiler and mix together eggs, sugar and lemon juice
The egg mixture should thicken and you will start to see a "ribbon effect" -- make sure you are not burning the eggs or scrambling them
This whole process should take about 8 - 10 minutes
Whisk in butter and let cool
Put berries on a plate and top with cool sabyone and a mint sprig
