Pimento Bisque

Tired of the everyday peppers try pimento's
Takes about 2 hours, start to finish. Serves 4.
 

Ingredients

¼ cup rice
5 cups chicken stock
3 canned pimientos
1 teaspoon salt
Few Drops Tabasco sauce
2 beaten egg yolks
1/3 cup cream

Directions

Soak rice in cold water 1 hour. 

Drain. 

Put stock in saucepan. 

Bring to a boil. 

Add rice gradually. 

Cover and simmer until tender. 

Add pimientos and cook 5 minutes more. 

Press through a sieve. 

Add salt and Tabasco. 

Mix yolks and cream. 

Put in tureen. 

Add soup.
