HEALTHY EATING: CHICKEN PARMESAN

Ingredients

4 boneless chicken breasts pounded to ½ inch
1 tablespoon olive oil
1 egg or egg substitute
½ cup Silk soy milk
Seasoned bread crumbs made by toasting wheat free bread in the oven and blending
1 package of rice cheese slices
1 jar organic spaghetti sauce
1 can rice parmesan cheese

Directions

Use a meat hammer to pound your chicken breast to ½ inch thickness

Whisk egg and milk together

In a separate bowl, mix egg and soy milk together 

Heat skillet with olive oil on high

Dip chicken into mixture and dip into breadcrumbs 

Brown chicken in a skillet until golden brown

Set chicken into a Pyrex baking dish

Place 2 slices of rice cheese on each chicken breast

Pour sauce all over the chicken 

Add more rice cheese and top with Parmesan rice cheese 

Bake in the oven at 350 for 25 to 30 minutes or until bubbly

Serve with rice or quinoa pasta
