GLUTEN FREE TURKEY AND STUFFING
DR. MEG MAKES A TRADITIONAL TURKEY AND STUFFING THAT TASTES JUST LIKE WHAT MOM MADE
Ingredients
1 loaf gluten free bread (Whole Foods Gluten Free Sandwich Bread)
1 large onion chopped
1 bunch celery chopped
1 tbsp sage
1 tsp basil
1 tsp parsley
1 tsp oregano
3 eggs
1 cup soy milk

Directions
Saute onion and celery in butter substitute (Earth Balance) until tender. Add sage, basil, parsley, and oregano at the last minute and stir around. Remove from heat. Cube bread in a large bowl. Add onion and celery mixture to bread. Add eggs and soy milk and stir.
Prepare turkey by removing inside bag and rinsing with lukewarm water. Sprinkle spices, salt and pepper on it. Place stuffing in turkey cavity loosely. Do not pack tightly. Place remainder of stuffing in a casserole dish or Pyrex baking pan and set aside.
Place turkey in oven, baking at 325 for recommended amount of time or per turkey thermometer directions. Forty minutes before turkey is done, place stuffing in the oven and bake uncovered to make it crispy. Remove turkey and let it cool about 10 minutes before carving.
