SHIGEFUMI TACHIBE PREPARES ONE OF HIS SIGNATURE MACROBIOTIC SALADS WITH HIS OWN PEPPERCORN RANCH DRESSING
Ingredients
Salad
Mixed greens
Romaine lettuce
Cucumber
Radish (marinated with plum vinegar)
Tempeh bacon
Red beets
Garbanzo beans
Avocado
Green onion
Carrot
Peppercorn Ranch Dressing
1/2 cup Rice milk
3 tbsp Lemon juice
2 tbsp Apple cider vinegar
1.5 tsp Ume vinegar
1/2 tsp Garlic
1 tsp Tarragon
1.5 tsp Dill
1/4 tsp Mustard powder
1 tsp Salt
1.5 tsp Black pepper
3/4 cup Soy yogurt
3/4 cup Vegenaise
1 box Silken tofu
1 tbsp White miso
Directions
Salad
On a bed of mixed greens, combine all the vegetable on a plate for serving. Drizzle the Peppercorn ranch over vegetables and garnish salad with fresh dill.
Peppercorn Ranc
Add all ranch ingredients into a pitcher and mix up in a blender. The finished consistency should be smooth and creamy.
