Welsh Rarebit

Can't have my sunday supper without it.
Takes 30 minutes, start to finish. Serves 4.
 

Ingredients

2 tablespoons butter or fat
2 tablespoons flour
¼ teaspoon mustard
½ teaspoon salt
Few grains cayenne
1 cup thin cream
1 ½ cups grated cheese
1 egg
Toast

Directions

Melt butter. 

Add flour, mustard, salt, and cayenne and mix well. 

Add cream slowly and bring to the boiling point, stirring constantly. 

Add cheese and stir until melted. 

Remove from fire. 

Beat the egg well and pour hot sauce on it. 

Mix well. 

Serve hot on toast.
