FRIED CHICKEN - CHRIS WILSON

CHEF CHRIS WILSON SHOWS HOW TO COOK HIS KINDA HEALTHY FRIED CHICKEN

Ingredients

2 whole chickens cut up or parts pre-cut

3 cups of flour for dusting and dipping

1 pint of buttermilk

1 cup breadcrumbs

8 eggs beaten

1 tablespoon paprika

1 tablespoon oregano

1 tablespoon garlic powder

1 tablespoon Italian seasoning

1 tablespoon dry mustard

Canola oil for deep frying

Directions

Heat enough oil in a sauce pan to be able to completely submerge chicken parts to 400 degrees, and use thermometer to maintain correct temp -- very important!

Soak chicken parts in buttermilk, then set aside

Mix all spices and breadcrumbs together in a big bowl, then set aside

Take a piece of chicken one at a time from buttermilk and dip in flour mixture then back in egg mixture then back in flour mixture, then set on a cookie sheet

With tongs carefully drop chicken pieces one at a time into oil mixture for only 15 seconds or until brown.

Take out the chicken pieces and set on a sheet pan with paper towels to drain

Finish off in the oven at 350 degrees till cooked through (if not sure cut into thigh until no pink is seen)

i tried your recipe, did it to the letter.....it turned out looking fantastic, but as my folks were eating, i noticed they were pealing off the coating and then the skin of the chicken......i asked why and they said the skin was rubbery and not good eating.......did i do something wrong?

Thank you :) Yesterday i converted the values and just tried out the recipe.. And it was really delicious! The coating was kind of like this “KFC-Stuff” but much better… The chicken flesh itself soft and tasty!

Hello. I’m glad you enjoy the video. All of the temperature degrees are in Fahrenheit, but that is equivalent to about 205 degrees Celsius. I’ll have some more videos up soon. Hope you enjoy!

I’d have a short question: do you mean degrees in fahrenheit or celsius? My oven’s highest temperature is about 250 degree celsius.
