TURKEY/CHICKEN SAUSAGE SANDWICH
Ingredients
1 french hoagie style roll halved, some of the inside removed from one half, the other half intact
3 jarred roasted red peppers sliced
1/2 onion sliced
3 turkey and/or chicken andouille sausage cut in rounds on a bias
4 tablespoon buttermilk dressing (homemade or store bought)
2 tablespoons crumbled blue cheese
1/2 head iceberg lettuce
1/2 cup cherry tomatoes halved
1 tablespoon olive oil
salt and pepper to taste
Directions
Get a large cast-iron skillet or heavy bottomed saute pan hot over high heat and add the oil. Once the oil is hot, add the sausage and saute for 5 minutes, then add the onions and peppers, season with salt and pepper and cook another 5 minutes
While the sausage, peppers and onions are cooking place the iceberg lettuce wedge on a large plate, top with the dressing, blue cheese and tomatoes
Spoon the sausage, peppers and onions into the roll and serve on the plate with the salad
