WATER MELON SALAD
JON AND VINNY PUT TOGETHER A QUICK WATERMELON SALAD, PERFECT FOR THE SUMMER
Ingredients
1 small watermelon cut in a large dice 1/4 red onion diced 3 tablespoons of basil picked and torn 3 tablespoons of mint picked and torn 1/2 cup feta cheese crumbled 1 lemon juiced 2 1/2 tablespoons olive oil salt to taste
Directions
In a large bowl combine all the ingredients and toss gently. Season with kosher salt to taste

It was great, super easy!
The only thing I would add is to let the watermelon sit in a colander while you chop up everything else to let some of the juice drain out so it doesn’t get soop-ish.
Loved it and looking forward to making it again!
I was introduced to this salad this summer and have had it at all family gatherings…..The version I’ve tried is almost the same but uses cilantro rather than basil and mint. There are also black olives in it…..mmmmmmmmm……refreshing, tasty and guiltless!
