Gazpacho
Ingredients
3 tomatoes, chopped (you can peel if you like, but who has time?)
3 cloves of garlic 2 cans of tomato juice (2-3 cups, whatever consistency you like)
a handful of parsley, chopped
a handful of cilantro, chopped
1 cucumber, chopped
2 slices of whole wheat bread
1/4 cup lemon juice
few tablespoons olive oil
1 red jalapeno
1/2 green pepper (or more, i'm just not that much of a pepper person)
sea salt, to taste
black pepper, to taste
Directions
Soak the slices of bread in the lemon juice and olive oil while you chop everything else up, then throw everything in a blender, puree for a half a minute and chill before serving. You chill, and also let the soup chill.
My advice: better the 2nd day, and with a dollup of sour cream and crackers with cream cheese on the side.
