SAUTEED JUMBO PRAWNS
Ingredients
1 pound jumbo prawns (shell on)
2 zucchinis rough cut
1 sweet onion sliced
1 lemon juiced
1 1/2 tablespoons chopped parsley
1/2 teaspoon crushed red pepper flakes
1/2 cup vegetable broth
1 tablespoon chopped garlic
cooking spray
salt and pepper to taste
warm baguette bread
Directions
Pre-heat oven to 450 degrees
Lay a large piece of foil down on the bottom of a baking dish and spray with cooking spray
On the greased foil, place the zucchini and onion, season with salt and pepper and toss well. Place in the oven for 15 minutes
While the zucchini is cooking get a large pan hot over high heat, add the shrimp cooking 1 minute per side, then add the wine and reduce by half. After the wine has reduced, add the vegetable broth, lemon juice, garlic and half the parsley, let cook for 4 minutes
Add the chili flakes
Remove the zucchini from the oven, place in bowl and top with shrimp and sauce, garnish with remaining parsley and serve with baguette
