Clam Chowder

Classic New England style chowder.
Takes about 1 hour, start to finish.

Ingredients

1 hunk salt pork (cut into small pieces so it fries up crisp)
4 onions sliced thin
4 large potatoes
6 cans chopped clams
2 bottles clam broth
1 quart half and half or ½ milk and ½ half and half if it is too rich for you.
5 dashes Worcestershire sauce (or more to taste)

Directions

Cook salt pork until crisp. Remove from pan. Cook onions in salt pork fat until soft. Add diced potatoes, clam broth, clams, and salt pork. Simmer until potatoes are cooked. Before serving, add half and half.  DO NOT boil after adding cream and milk. Serve with “oysterettes”=oyster crackers. 

Tip: Cook recipe without cream and milk in clam broth until potatoes are soft, approximately 45 minutes. Then add milk and cream and warm before serving. Mixture before adding cream can be made anytime during the day.
