Ingredients
3 1/2 cups cooked white rice
1/4 cup peas
1/4 cup small diced carrots
1/4 cup small diced celery
1/4 cup small diced onion
2 boneless skinless chicken breasts diced small
3 eggs beaten with a pinch of salt and pepper
6 peeled and de-veined shrimp
2 tablespoons soy sauce
4 tablespoons canola oil
1/2 cup chopped green onion for garnish
Directions
Heat a wok or large saute pan till very hot
In 1 tablespoon of oil fry the egg, break up in pieces and set aside
in the same pan add 1 tablespoon of oil and cook chicken about 80% through then remove chicken and set aside
Again in the same pan add 1 tablespoon of oil and cook the shrimp till they just turn pink then remove shrimp
Add the remaining tablespoon of oil and saute celery and onion for 5 minutes
Add the rice and fry for another 5 minutes
Add everything else back into the pan with the addition of the peas and carrots and cook for final five minutes
Just before removing fried rice from the pan toss in soy sauce
Garnish with green onions
