Spinach Souffle

I can feel my muscles growing already
Takes 30 minutes, start to finish. Serves 6.
 

Ingredients

2 ½ cups boiled spinach
1 tablespoon butter
1 tablespoon flour
Salt—Pepper—Nutmeg
½ cup milk
1 beaten egg

Directions

Chop spinach fine. 

Heat. 

Rub through a coarse sieve. 

Reheat and add butter, blended to a smooth paste with flour. 

Season to taste with salt, pepper, and nutmeg. 

Add milk and egg. 

Beat until light. 

Pour into individual greased baking dishes. 

Bake in moderate oven (350°F.) 15 minutes.
