Maple Cream Balls

What you get when you cross Vermont with a sweet tooth.
Takes about 2 hours, start to finish. 20
 

Ingredients

2 cups maple syrup
2 tsp. butter or butter substitute
1/8 tsp. salt
1 tsp. vanilla flavoring
2/3 cup chopped nuts

Directions

Boil sirup and salt to soft ball stage 234º-238ºF.

Remove from fire. Cool to room temperature.

Add butter.

Add flavoring.

Beat until creamy.

Add ½ the nuts.

Continue beating until mixture is sufficiently firm to mold into small balls.

Roll balls in remainder of nuts.

 Place on waxed paper to harden.
