QUICK AND EASY CHILI
CHEF CHRIS WILSON PREPARES CHILI, QUICK AND EASY
Ingredients
1 pound lean ground beef
1 large onion chopped
1 red bell pepper chopped
2 tablespoons plus 2 teaspoons chili powder
1 large garlic clove minced
1 jalapeno pepper seeded and choped
1 can (28 ounces) diced tomatoes, with juices
1 can (8 ounces) tomato sauce
1 chili seasoning packet
1 can (15 ounces) chili beans, small red beans, kidney beans, drained and rinsed
2 tablespoons neutral oil
Directions
In a pot over high heat add the oil. Once smoking, add the onion and pepper; after 2 minutes add the beef, cook until the meat is browned, stirring until the meat is crumbled.
Add the remaining ingredients, stir well and bring to a boil. Cover, reduce heat and simmer, stirring occasionally for about 2 hours
