Lima Bean Salad, Italian Style

Serve in salad bowl with a border of sliced heirloom tomatoes and onion rings
Takes 15 minutes, start to finish. Serves 6.
 

Ingredients

2 cups boiled lima beans
2 tablespoons chopped parsley
1 chopped clove garlic
1 chopped Spanish onion
¼ cup olive oil
1 tablespoon vinegar
½ teaspoon salt


Directions

Mix beans, parsley, garlic, and onion with a fork. 

Gradually add oil. 

Add vinegar drop by drop. 

Chill. 

Add salt. 

Serve in salad bowl with a border of sliced tomatoes and onion rings. 

Garnish with paprika.
