Peach Soup

Make this soup towards the end of peach season, when you have more peaches than you know what to do with.
Takes about 1 hour, start to finish. Serves 6.
 

Ingredients

2 cups sliced peaches
2 cups white wine
1/8 teaspoon cinnamon
2 cloves
Sugar to taste


Directions

Put a pint of water with spices on the range. 

Add peaches. 

Cook until tender. 

Press through colander. 

Put back with the juice and boil for a few minutes. 

Stir in the wine and add sugar to taste. 

Heat just under boiling point and serve in hot plates garnished with croutons. 

Cider or grape juice can be used in place of wine.
