Stuffed Baked Potatoes
If you have leftover baked potatoes this recipe is great. Sometimes I sprinkle the tops with jack cheese
Ingredients
6 medium-sized baked potatoes
½ cup hot milk
2 tablespoons butter
1 teaspoon salt
¼ teaspoon pepper
1/8 teaspoon paprika
Directions
Cut a cross in the side of each potato.
Turn back corners.
Scoop out insides without breaking skin.
Combine with other ingredients.
Mash and beat until light.
Fill potato skins with mixture.
Dot with butter.
Brown in moderate oven (350°F.).
Grated cheese may be sprinkled on potatoes before cooking.
Chopped onion and chopped
cooked ham may be added to stuffing, if desired.
