Potatoes Hashed in Cream

Soooo rich and delicious!!!
Takes 30 minutes, start to finish. Serves 6.
 

Ingredients

3 cups diced boiled potatoes
2 tablespoons butter
2 cups light cream
Salt—Pepper

Directions

Dice potatoes in small, even-sized cubes. 

Melt butter in heavy frying pan. 

Add potatoes and stir over medium heat until butter is absorbed. 

Add cream and cook over low heat about 20 minute, until mixture is thick. 

Season to taste with salt and pepper.
