MEDITERRANEAN PASTA - FRITTO MISTO

Ingredients

5/12 oz Lemon Pepper Fettuccini
2 oz basil pesto sauce
2 ox Sun dried Tomatoes
3 oz Artichoke hearts
3 oz mushrooms, sliced and sautéed
1 oz. Olive Oil
1 tsp. Fresh garlic
1 "pinch" salt
1 "pinch" pepper

Directions

1) Have large pot of water come to a full boil
2) Sautee pan must be hot
3) Sauté s in Sun dried Tomatoes, Artichoke hearts, mushrooms olive
oil until tender
4) Put pasta in boiling water for 2-3 minutes (dry pasta takes longer to cook)
5) Add pesto sauce to sautéed ingredients and toss.
6) Drain pasta
7) Add pasta to sauté pan with other ingredients and toss
8) Place pasta and sauce on large plate or pasta bowl


*Hint, we make our own sauces and seasonings but you can find these
items prepared in the specialty aisle at your market. Keep all these
items stoked in your pantry for a quick meal.
