Cream of Potato Soup

Two words: Yukon Gold
Takes about 1 hour, start to finish. Serves 4.
 

Ingredients

3 medium-size potatoes
1 slice onion
1 sliced stalk celery
½ teaspoon salt
2 cups cream
3 tablespoons chopped parsley

 

Directions

Wash and cut potatoes in halves. 

Put in saucepan with onion, celery, salt, and 3 cups boiling water. 

Simmer until potatoes are tender. 

Strain, reserving 2 cups stock. 

Press potatoes through a sieve into stock  

Add hot cream. 

Mix well. 

Sprinkle with parsley.
