MONKFISH IN PARCHMENT PAPER
CHEF LYNN GRAY COOKS UP A GREAT HOME ALONE DISH
Ingredients
7 ounces monkfish
1 1/3 tablespoons soy sauce
1 1/3 tablespoons green onion minced
1/2 lemon juiced
1/2 teaspoon chives minced
1/2 teaspoon parsley chopped
1 tablespoon dry white wine
Cooking Spray
Parchment paper
Mixed baby greens with your favorite dressing
Directions
Pre-heat oven to 400 degrees
Spray a 9 X 12 baking dish with cooking oil
Lay out sheet of parchment paper on baking dish, then lay the monkfish down on the parchment, top with soy sauce, green onions, lemon juice, chives, parsley and wine. Bring edges of parchment together and fold to seal on all sides
Bake for 20 minutes
Cut open parchment remove fish and spoon juices over, serve with salad of baby field greens
