Texican Chicken
Ingredients
- 2 cans (cups) of cubed or shreeded chicken meat
- 2 cans of your favorite Rot'el Tomatoes - drain all the liquid out
- 2 cups of shreded Mexican Blend cheese
- *2 cans of Campbell's Cream of Chicken Soup (undilited).
- 3 to 4 large Flour Tortillas, fresh if you can get them
*Do not use the reduced fat Cream of Chicken Soup as it turns to water in this dish and ruins it!!!
Directions
Line a microwave safe bowl with the Flour Tortillas to form a type of crust across the bottom and up the sides of the bowl
In another bowl combine chicken, Rot'el Tomatoes, and 2/3rds of the grated cheese. When thoroughly mixed pour into the Tortilla lined bowl and spread evenly.
Now take the 2 cans of Cream of Chicken Soup - UNDILUTED - and with a spatula spread the Soup over the top of the mixture like an icing. Sprinkle the remaining Cheddar Cheese, or more to your taste, over the top of the soup, cover with Saran wrap and microwave until warmed through and all the cheese is melted. Serve immediately or put in the fridge to re-heat later.
You won't be able to put this one down - Guaranteed.
This is my favorite dish in the whole world. Fifteen minute preparation, serve with salad or with Mexican Rice and Beans. You will be eating this as a midnight snack IF there is any left over! Enjoy
