CYNTHIA'S MEAT LOAF

I INCLUDE A WAY TO MAKE THIS IN A MICROWAVE

Ingredients

Meat Loaf:

1 ½ cups cornbread stuffing
½ cup wine or orange juice
1 tablespoon ketchup
1 ½ pounds ground meat
1 large onion, chopped sm.
1 (12-oz.) package frozen baby carrots
5 medium potatoes, cut in half

Basting Sauce:

1 cup red wine
1 teaspoon dried mustard
1/2 cup brown sugar or corn syrup



Directions

Thoroughly mix first 5 ingredients and form into a loaf. Arrange in baking dish and surround with carrots and potatoes. Put in oven for 15 minutes at 350°.

Meanwhile, assemble basting sauce. Cook meat loaf for addition 1 hour, basting every 15 minutes with sauce. 

Variation- Microwave: Mix loaf ingredients and form into a ring (place a glass upside down in middle of large glass bowl and form meat around it in bowl). Sprinkle top of meat load with paprika and/or mushroom powder mixed in a bit of basting sauce to five brown color. Microwave 17 minutes. Let stand 5 minutes before serving. In separate glass bowl, place vegetables and sprinkle basting sauce on vegetables, microwave veggies 12 minutes.
