FUL
Ingredients
1 can ful beans
1 can garbanzo beans
1 clove minced garlic
3 tomatoes skinned and crushed
1 bunch chopped parsley
1 bunch chopped mint
4 tablespoons olive oil
1 lemon juiced
1 serano chili minced
3 tablespoons chopped cilantro
1 cup pear tomatoes halved
2 pieces lavosh bread or pita
Salt
Directions
Put beans in a pot over medium heat and let cook for 1/2 hour
In a large bowl mix 1/2 the oil, 1/2 the lemon juice crushed tomatoes and salt. Spoon the cooked beans into the bowl, then add parsley, mint and mix well
In another bowl make the pear tomato salad by combining the tomatoes, with the remaining lemon juice, remaining olive oil, cilantro and chili, mix well
lay a piece of lavosh down on each plate top with ful beans roll up and place tomato salad off to the side
