Baked Stuffed Tomatoes

I make these at the end of summer when tomatoes are in abundance.
Takes about 2 hours, start to finish. Serves 6.
 

Ingredients

2 cups soft bread crumbs
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons sugar
3 tablespoons olive oil
6 tomatoes

Directions

Mix bread crumbs with salt, pepper, 1 tablespoons sugar, and 2 tablespoons olive oil. 

Cut thin slice form stem end to tomatoes and remove a little of the center. 

Sprinkle with salt, pepper, and sugar. 

Fill with the stuffing. 

Drizzle with olive oil and bake in a moderate oven (350°F.) 1 hour.  

Two cups of shredded cabbage, seasoned with 1 chopped onion, salt, and pepper is another good stuffing. 

Or, tomatoes may be filled with balls of sausage meat.  Buttered corn flakes may be sprinkled on tomatoes before cooking.  One cup cooked, quartered shrimps may be substituted for 1 cup crumbs.
