CHICKEN TACOS - MIKEY GALVAN
CHEF OWNER OF MIS PADRES SALSA GRILLS UP A CLASSIC
Ingredients
1 chicken breast chopped
4 small white corn tortillas
1 tablespoon cilantro
1 tablespoon onion
1 tablespoon salsa
1 tablespoon soybean oil
2 scallions
salt and pepper
Directions
Get large cast iron skillet hot and add oil
Saute chicken till browned and crispy about 4 minutes
While chicken is sauteing push to one side of the pan and char scallions
Warm tortillas and stack on a plate 2X2, then top with chicken
Garnish with cilantro, onion, salsa and charred scallions
