Ingredients
For the noodles:
1 pound egg noodles boiled and chilled
1/4 cup cucumber matchsticks
1/4 cup carrot matchsticks
1/2 cup bean sprouts
For the seasame peanut sauce:
3 tablespoons sesame paste
1 tablespoon soy sauce
2 tablespoons sugar
4 tablespoons peanut butter
6 tablespoons hot water
Directions
Blanch and then shock the bean sprouts and carrots
In a large bowl whisk together all ingredients for the sauce
Toss everything in a bowl and serve
