APPLE CINNAMON NOODLE KUGEL
Ingredients
2 cups egg noodles cooked (see directions on bag/container)
8 tablespoons unsalted butter
4 eggs beaten
1 cup 4% milk fat cottage cheese
1 cup full fat sour cream
3 apples diced
2 tablespoons honey
1 tablespoon cinnamon
1/2 cup golden rasins
1 1/2 teaspoons ground white pepper
1 1/2 teaspoons salt
Directions
Pre-heat the oven to 350 degrees
Butter a deep baking dish with 1 tablespoon of the butter
Place the cooked noodles in a large bowl
In a large saute pan over low heat melt the remaining butter. Once the butter is melted pour about half over the noodles and mix well. Put the pan back on the burner and turn the heat up to medium/high let the remaining butter in the pan just start to brown. Then add the apples, cook for about 2 -4 minutes or until just softened. When the apples are cooked add the cinnamon and honey, saute for 2 more minutes then pour over noodles and mix well.
Add the remaining ingredients: salt, white pepper, golden rasins, eggs, cottage cheese and sour cream. Mix well and pour in a greased baking dish.
Place kugel in the oven for 45 minutes, then remove and let cool for at least 10 minutes.
Cut and serve or just stick a large spoon in it and let your family go at it .
