Chicken in Garlic, Wine and Tomato Sauce
Easy to make. I always double this recipe as people love it and it is great as leftovers. Serve with white rice.
Ingredients
4 boneless, skinless chicken breasts - thin if possible
1 egg, beaten
italian bread crumbs
olive oil for frying
1 c. white wine
1 c. chicken stock
2 large tomatoes, chopped
1 garlic clove, crushed
parsley - i use it when i have it. no big deal.
Directions
Coat chicken with egg and then breadcrumbs. Heat oil in large, deep fry pan.
Saute chicken on both sides until brown. Remove from pan. Pour stock and wine into pan and bring to a boil. Add tomatoes, garlic, salt/pepper. Bring to boil again and then add chicken to mixture. Cover and simmer about 45 minutes.
