POACHED SALMON
CHEF LYNN GRAY OF WHAT'S FOR DINNER TONIGHT MAKES A GREAT ONE PAN SALMON DISH
Ingredients
1 1/3 pound whole salmon fillet skin on
1 bunch of fresh dill chopped
3 tablespoons of brined capers drained
2/3 cup dry white wine
1 1/2 tablespoons of butter
Directions
Pre-heat oven to 375 degrees
Lay a large piece of tin foil in a Pyrex pan or on a cookie sheet
Place salmon filet on the foil
Add all ingredients and seal tight
Bake in oven for 20 - 30 minutes depending on thickness of the salmon
