COLLEGE FOOD: FAJITAS
Who ever said you can't enjoy gourmet Mexican food in the comfort of your dorm room?
Ingredients
1 large tortilla
1 package of pre-marinated carne asada
1 package of precut fajita veggies: red and yellow peppers, onion and cilantro
1/4 cup Mexican style mixed shredded cheese
Directions
You will need a sandwich press or George Forman Grill, and a microwave
Get the grill very hot, place meat on the grill, close and let cook for 8-10 minutes
Remove meat and let rest
While meat is resting throw veggies on the grill for one minute and microwave tortilla for 40 seconds
Slice meat against the grain, place on top of tortilla with veggies and cheese
Eat open faced or roll like a burrito
