An eleven-year veteran of the Ritz Carlton hotels, Chef Zubrod served in five star
properties in Naples, Florida and most recently the Ritz Carlton Residence Club’s Willow
Creek Bistro in Aspen Highlands. Cited by Aspen Magazine as “the best reason to go
Aspen Highlands”, Chef Zubrod created a destination dining experience at Willow Creek
Bistro. Notable assignments also include Chanticleer in Nantucket and the famed
Michel Rostang and Philipe Groult’s Ampycles, both in Paris.
Recognized twice for Best Hotel Chef from the James Beard foundation, a two- time competitor
and a 1999 finalist in the Bocuse d’ Or and winner of “Best Exotic Chili” cook off in Vail 2001,
Chef Zubrod is an active member of the community in Aspen and the surrounding areas.
Zubrod’s primary focus is as executive chef and managing partner at DishAspen but also is in
collaboration on two other restaurant concepts in the Aspen area as well. In his “old
neighborhood”, Aspen Highlands, Zubrod has recently opened Crust, a gourmet, hand-tossed
pizza café serving, easily, the best pies in the area. In addition to Crust, ZG Grill, an American
Burger Bar, is steps away from the slopes and offers inventive, flavorful après fare in a casual,
elegant setting.
Matt has an eight-year-old daughter, Christina and lives in Aspen steps away from his
DishAspen kitchen. He has a passion for the total dining experience and can often be found
entertaining friends at the Chef’s Table in the DishAspen kitchen.
