What Gary doesn't get into here is how to tell grower champagne from the regular stuff. The easiest way is to look for the initials RM somewhere on the label. Not NM or CM - those aren't grower champagnes. Snatch the ones with the RM.

Justin, my friend, I feel like there's a disconnect here: You're describing the most proper, formal way to open Champagne, but you're dressed like you just came home from the Artic Monkeys concert. What's going on there? Also, don't be afraid to pick up the pace!
