Pegged as one of the hot new chefs to arrive on the L.A. scene, the Times’ S. Irene Virbila says, “Spence's lusty food is no dream… It's rustic and direct -- she doesn't know how to do dainty -- and comes on like a powerhouse…This is food from someone who loves to eat.” Every major publication in town has anointed Spence with praise and stars for the sexy, “chef’s playground” style of food she puts out at Bar Marmont. In late 2007 she officially took over the kitchen at Chateau Marmont to the delight of its A-list Hollywood clientele.

Spence’s East Coast provenance would predict nothing less. During her tenure as Chef de Cuisine at the Spotted Pig - the Mario Batali owned Gastro Pub - it earned numerous nods from the James Beard Foundation, as well as one Michelin Star. She kick started her career at East Coast Grill with Chris Schlesinger (a James Beard Best Chef & cook book award winner) who remains her greatest influence. She was sous-chef at AZ when it received the coveted three stars from the New York Times. Carolynn has worked under great chefs such as Andy Husbands, Patricia Williams, Richard Farnabe, Bobby flay, Patricia Yeo, Ken Callaghan and April Bloomfield.
